Toen de Spanjaarden aan het begin van de zestiende eeuw het rijk van de Azteken in Midden-Amerika binnendrongen, ontdekten zij een wereld die hun verbeelding prikkelde maar ook onrust opriep. Op de Azteekse markten zagen ze voedingsgewassen die in Europa volkomen onbekend waren. Een daarvan was de tomaat.

De tomaat legde een lange tocht af: van Midden-Amerika naar Europa, en van daaruit naar de Lage Landen. Via het grote Spaanse rijk werd ze opgemerkt aan hoven, in tuinen en in netwerken van botanici. Ook in de Nederlanden verscheen zij al vroeg in drukwerken en werd ze poma amoris of liefdesappel genoemd. Terwijl de vrucht in Italië en Spanje langzaam haar weg naar de keuken vond, bleven de Lage Landen terughoudend.

Pas aan het einde van de negentiende eeuw onder invloed van buitenlandse culinaire smaken, de groei van de tuinbouw en een veranderend consumptiepatroon belandde de tomaat op ons bord. Wat vandaag vanzelfsprekend lijkt, blijkt het resultaat van een reis langs onverwachte wegen waarlangs iets vreemds, vertrouwd wordt.

Bart De Prins is een Vlaamse historicus en die als uitgever werkzaam is. Hij combineert een brede belangstelling voor geschiedenis en eetcultuur met een uitgesproken interesse voor de tomaat.
